Grape varieties: 100% Tinta of Toro (Tempranillo)
Winemaking: Pre-fermentation maceration in cold at 8ºC, then fermentation is traditionally carried out in wood tanks with 100% de-stemmed grape. Temperature controlled fermentation at 27-29 °C during 20-25 days. Subsequently, wine is run-off and left to settling before barrels are filled.
Barrel aging: 15 months of barrel ageing. Wine is racked every 3 months.
Bottling aging: Wine remains a minimum of 21 months aging in bottles before being marketed. They are kept lying down on metallic racks in an isolated facility where temperature never exceeds 18 °C.
Barrel type: 100% French oak (superfine grain)
Alcohol content: 14,5% Vol.
Colour: Intensed cherry red.
Aroma: Dominant fragrance is that owed to its aging in oak. Great bouquet, smoke, ash.
Mouth: Well-balanced, round taste lingers at back of nose. Highly complex and elegant.
Serving temperature: 16 - 18°C.
Recommended for: Meats, roasts, game and cured cheeses.
