Designation of origin: D.O. Rueda
Grape varieties: 100% Verdejo.
Winemaking: Harvesting mid-september. Processing plants situated 10 km away: Crushing, Cooling, Pressing (1st fraction), juice fermentation, (Fermentation at 14-16°C) in stainless steel tanks, yeast and nutrition supplement, sterile cool bottling.
Bottling aging: Wine remains a minimum of 2 months aging in bottles before being marketed. They are kept lying down on metallic scantling in an isolated facility where temperature never exceeds 16°C.
Alcohol content: 12% - 13% Vol.
Colour: Straw coloured.
Aroma: It unflurs a wide and clean choice of fruity aromas, especially of exotic fruit (aniseed), produced by the verdejo variety.
Mouth: Velvety and big with a touch of acidity that produces a lasting aftertaste with a characteristic bitterness on the back palate.
Serving temperature: 7 - 9°C
Recommended for: Fish, sushi, chicken, seafood.
