“Clos des Avaux” planted on slightly stony soil at the exit of the combe. This climate gives wines of great flexibility. Mode of culture: Reasoned fight, grassing on the row. Harvest: Manual in perforated boxes of 20 kg. Yield: 40hl/ha Vinification: Sorting of the harvest then complete destemming, cold pre-fermentation maceration for 5 days at 12°C, fermentation for about 13 days with pumping over and some punching down to improve the extraction, then hot post fermentation for 3 days. Ageing: 80% put in barrels with 40% new barrels and 40% barrels of one or two wines and 20% in stainless steel vats for 12 months. Assembly of the tank and the barrels for bottling.
