“Champs Pimont” planted on a light and very stony ground in the basement. This climate gives wines of great flexibility and richness.
Mode of culture: High Environmental Values.
Harvest: Manual in perforated boxes of 20 kg.
Yield: 45hl/ha
Vinification: Sorting, then full pressing of the grapes, static settling and placing in barrels for alcoholic fermentation.
Aging: Put in barrels for 100% with 20% new barrels and 80% barrels of one or two wines for 12 months. Assembly of barrels for bottling.
Food and Wine Pairing: Perfect match with fatty fish, grilled or with a butter sauce, white meat.
