Area: 0.40 ha
Grape variety: 100% Chardonnay
Age of the vines: 35 years

The white Hautes Côtes de Beaune is planted on a hilly relief and a fairly poor soil. The vine flourishes on a soil of marl and limestone scree.
Cultivation method: Reasoned control, The soil being not very fertile, we must regularly add organic manure to restore the natural balance of the soil.
Harvest: Manual in perforated boxes of 20 kg.
Yield: 45hl/ha
Vinification: Full pressing of the grapes, static settling and placing in barrels for alcoholic fermentation.
Ageing: Depending on the vintage, between 40 and 80% of the harvest is put in barrels, only barrels of one or two wines so as not to over-wood. Our Hautes Côtes are wines to be drunk fairly quickly for 2 to 3 years.

Food and Wine Pairing: Goes very well with parsley ham or Burgundy snails.
